Happy February friends!! It’s the month of looooveee <3

To kick off this month, I’m sharing 25 (!!!) seasonal recipes for you to make using this month’s produce. On this post, we’re talking soups, stews, salads, baked goods, appetizers, dinners… a little bit of everything for you! But first, let’s chat about why eating seasonally even matters:

  • Eating ripe, in season produce will ensure you’re getting maximum nutrient density and higher levels of vitamins, minerals, etc.

  • Better taste: fruits and vegetables in their peak season will have the most flavor and best texture, as they aren’t picked early to survive long shipping processes.

  • In-season produce is generally lower cost/more-budget friendly, due to supply and demand.

  • It’s better for the environment! Eating in season encourages buying locally grown produce, which reduces carbon footprint and is better for the environment overall.

  • Last but not least, my favorite reason to eat seasonally: the produce that grows each season typically aligns with our bodies’ needs. In the winter, vitamin C rich foods and hearty root vegetables are abundant for immunity and warmth, while the summer provides hydrating, refreshing produce for hydration and minerals!

Now that we’ve gone over the basics, let’s get to the good stuff! February is a month full of root vegetables (winter squash, carrots, beets, potatoes), bright citrus (lemon, lime, orange, grapefruit), and lots of cruciferous vegetables (broccoli, Brussels, cabbage, kale). We’ve also got apples, pears, and persimmons lingering around! The 25 recipes I’ve selected to share below incorporate one or more of the produce that’s in season right now.

Every single one of these recipes is wonderful, I hope you love them as much as I do! If you make them, make sure to tag me on instagram, I’d love to see your creations <3 enjoy my friends!!
