The fall salad of my dreams. Light and refreshing, this salad makes for a perfect side dish or lunch meal prep
Hi friends! Happy Wednesday. I recently made this beautiful dish combining all of my current favorite produce: honeycrisp apples, radicchio, fennel, and sweet potatoes. Toss it in the delicious vinaigrette and lots of Parmesan cheese for a quick and delicious salad that’s sure to impress.
Full recipe below- I’ve been pairing this with chicken for the perfect meal prep lunch. Enjoy!
For the white vinaigrette:
¼ cup olive oil
2 tbsp lemon juice
2 tbsp apple cider vinegar
1 tsp lemon zest
1 tsp Dijon mustard
1 clove garlic, grated
2 tsp honey
½ tsp salt, + more to taste
Lots of freshly cracked black pepper
Combine all ingredients, set aside.
For the salad:
1 apple, thinly sliced
1 bulb of fennel (white part only), shaved with a mandolin or VERY thinly sliced
1 head radicchio, thinly sliced or shredded with a mandolin
2 medium sweet potatoes, chopped into small pieces and roasted (I roasted mine tossed in 1 tbsp honey + 1 tbsp olive oil, + sprinkle of salt at 425 for about 30mins)
1/3 cup Parmesan cheese shavings
1 shallot very thinly sliced or diced
Add all ingredients to a bowl and toss with desired amount of the vinaigrette. Chill in fridge before serving if desired, and enjoy!
Salads full of autumnal produce have been one of my favorite things to make recently- I just love the variety and abundance as we transition into the cooler months :)
