Bright, refreshing, and light- this dish may become your new favorite way to cook salmon
When I was brainstorming this recipe, at first I was going to make it a yellow curry with deep, rich spices. I decided that I wanted to keep it very simple and light.. which led me to create this poached salmon with lemongrass: a tropical grass with a bright lemon scent and flavor.
We’re using coconut milk to poach the salmon, resulting in a light and refreshing dish. I paired the broth with lemongrass, a touch of miso paste for umami flavor, and lots of fresh herbs + scallions to amp up the flavor. Pair with some rice or rice noodles to soak up that broth. Full recipe is below, I hope you love it!!
2 tbsp coconut or neutral oil
2 large stalks lemongrass, finely minced, white parts removed
2 cloves garlic, grated
4 salmon filets
4 green onions, white parts only, finely diced
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 can coconut milk
2 cups broth
2 tbsp coconut aminos
2 tbsp honey
2 tbsp miso paste
Salt and pepper, to taste
Cilantro, Thai basil, scallions, and limes to serve
Rice noodles or jasmine rice to serve
Heat a large deep skillet over medium-medium high heat. Add in the white parts of the green onions and saute until softened.
Add in lemongrass, ginger, and garlic. Saute until very fragrant.
Add in red bell pepper and orange bell pepper.
Add in miso paste and saute until the miso has deepened in color a bit, about 2-3 minutes.
Add coconut milk, chicken broth, coconut aminos, honey/sugar, and stir well. Bring to a boil, then reduce to a simmer.
Add salmon filets and poach for 10-15 minutes or until temp reaches 130F internal.
Stir in salt (or more coconut aminos) and pepper to taste, if needed. Serve over rice or rice noodles and top with herbs + a squeeze of fresh lime. Enjoy!
I hope you love this recipe!!! It’s such an easy and delicious way to enjoy salmon. Also super impressive if you’re serving to guests.
