Say it 5 times fast ;) a quick and easy soup that is nourishing and full of winter produce. Packed with bright and warm flavors, it’s sure to keep you cozy!!
I love squash in the winter, and koginut squash is definitely an underrated one! It’s similar to a butternut squash, except it has a creamier and smoother texture. The skin is edible, making it perfect for a quick soup.
For this recipe I tasted and adjusted as I went- the key here is to layer the flavors and add enough tamari and lime juice until the soup tastes bright and lively. The toasted peanuts on top are a beautiful touch, don’t skip them!
Full recipe below, I hope you love it!! <3
For the soup:
1 koginut squash, seeded and cubed
2 medium carrots, halved lengthwise then sliced
½ cup diced green onions + more for garnish
1 tbsp grated fresh turmeric
1 tbsp grated fresh ginger
1 tbsp sesame oil
4 cloves garlic
1 tbsp yellow curry powder
1/2-1 cup coconut milk, depending on how creamy you’d like it
6-8 cups broth
3 tbsp tamari + more to taste
Optional: dash of sriracha or red pepper flakes, if you like a bit of heat
1lb shredded chicken breast or thighs
1-2 tsp fish sauce, to taste
Juice of one lime, more to taste
To garnish:
cilantro, mint, and/or basil
Toasted peanuts
Thinly sliced green onions
Extra lime juice
Start by heating sesame oil in a skillet over medium high heat. Add in turmeric, ginger, and green onions, saute until onions soften. Add in garlic and saute until fragrant.
Add carrots and squash, stir to combine. Sprinkle in the curry powder and stir to coat everything. Add coconut milk, broth, tamari, sriracha/red pepper flakes if using, stir to combine. Bring to a boil, then reduce to a simmer.
Simmer for 20 minutes or until squash is fork tender. Add in chicken, fish sauce and lime juice, stir well, and taste. Add more tamari and lime juice as needed until soup is bright and lively tasting.
Garnish with cilantro, mint, and/or basil, as well as chopped toasted peanuts, a squeeze of lime juice, and thinly sliced green onions/scallions. Enjoy!
I hope you love this recipe!! It’s such a great way to use seasonal produce, the flavors pair so well with the creaminess of the koginut squash.
