Christmas Cookie Box Recipe Collection
A cup of coffee’s best friend: perfectly crisp biscotti with lovely notes of toasted hazelnut, dipped in dark chocolate for a flavor match made in heaven.
I feel like many people aren’t biscotti fans, and before I honestly wasn’t either.. but these are perfectly balanced in terms of texture and flavor, and completely changed my mind. I definitely recommend giving them a try, especially with coffee or tea!!
The biscotti recipe is adapted from The Big Man’s World, original recipe linked here.
Full recipe below, enjoy!! <3
3 1/2 cups fine hazelnut flour (I used Bob’s red mill)
1 tsp baking soda
½ tsp salt
½ cup hazelnuts, chopped
1 tsp cinnamon (optional)
2 eggs
½ cup honey
½ cup softened butter
½ tsp vanilla extract
Dark chocolate + extra hazelnuts, for decorating
Preheat the oven to 325F. Line a large baking sheet with parchment paper and set aside.
In a large mixing bowl, combine your dry ingredients and mix well. In a separate bowl, whisk together your wet ingredients until combined. Gently fold in the dry ingredients into the wet, until fully incorporated.
Lightly flour a kitchen surface. Remove the dough from the bowl and form two equal portions. Using your hands, form two rectangular loaves, 1-inch in size. Place the two loaves on the lined pan and bake for 20 minutes, until golden brown.
Remove the loaves from the oven and let cool for 15 minutes. Reduce the oven heat to 250F.
Slice up the two loaves into 1/2-inch biscotti, and place them on the lined baking sheet. Bake the biscotti for an additional 20-30 minutes, or until dried out and slightly browned/toasted (this may take longer depending on the size/thickness of your biscotti). Remove from the oven and let cool completely.
Once cooled, melt dark chocolate in a microwave safe bowl. Dip one end of the biscotti into the chocolate. Top with crushed or chopped hazelnuts, and place on parchment paper to set. Alternatively, you can drizzle the chocolate over the biscotti.
Once chocolate is set, dig in!! Store at room temperature. Enjoy :)
