Other flavors can try, but nothing can beat the Umami-rich miso paste. This salmon is smothered in a miso marinade, broiled until crispy and charred in some spots, and served with addictive soba noodles.
If you’re a fan of salmon, I promise you this is the absolute BEST way to make it. Truly nothing compares to the umami-rich flavors of miso paired with buttery, slightly sweet salmon.
The soba noodles shine even by themselves: starring ingredients such as tamari, sesame oil, rice vinegar, and fish sauce. YUM.
I built up the bowls by adding some salted cucumbers, carrot ribbons, radishes, toasted peanuts, and seaweed. Choose your own adventure!!
Full recipe is below, I hope you love these bowls as much as I do!! You can also serve the salmon with rice, coconut rice, salad, or even quinoa. Enjoy :)
Miso salmon:
1/4 cup white miso paste
3 tbsp honey
1 tbsp rice vinegar
1 tbsp grated fresh ginger
2 tsp sesame oil
4 salmon filets
Combine miso paste, honey, rice vinegar, ginger, sesame oil in a bowl. Whisk well until smooth.
Add salmon to the bowl and gently toss to coat salmon in marinade. Marinate for 30 mins-6 hours.
To bake: position a rack at the top of the oven and preheat oven to 425F. Line a pan with foil, add salmon filets. Brush excess marinade on top of the salmon filets.
Bake salmon for 5 minutes, then broil for an additional 3-5 minutes, or until salmon is easily flaked with a fork. If the salmon is getting too black, turn the heat back down.
For the soba noodle sauce:
1/3 cup tamari
2 tbsp sesame oil
2 tbsp rice vinegar
1 tbsp honey
2 tsp grated fresh ginger
1 clove garlic, minced
1-2 tsp fish sauce
1/4 tsp Cracked black pepper
Sesame seeds
Scallions
Combine all ingredients in a bowl. Cook soba noodles according to instructions, then drain and add back to pot. Pour sauce over and stir to combine. Keep over low heat until ready to serve, and make sure to toss noodles in the sauce right before serving.
For serving:
chopped cucumbers
Radishes
Seaweed
lime wedges
Toasted chopped peanuts
carrot ribbon salad: carrot ribbons, salt, rice wine vinegar, honey to taste
Add soba noodles to a plate, followed by the salmon and any toppings your heart desires. Enjoy!!
