The best peppermint bark brownies EVER! Fudgy, rich, and decadent with pops of dark and white chocolate + sprinkled with candy canes… it doesn’t get much better than this. These are gluten, grain, dairy, and refined-sugar free; making them a perfect healthier + nourishing treat!!
Good morning friends!! Today I’m sharing one of my favorite dessert recipes I’ve ever made: these INCREDIBLE peppermint bark brownies. They’re incredibly fudgy, soft, and gooey: everything a brownie should be and more. The peppermint bark chocolate shell hardens for a pop of texture along with the crushed candy canes.. they’re just so perfect in every way.
The base recipe for the brownies comes from the amazing Ambitious Kitchen- I made some adjustments in order to make them “peppermint bark” flavored!!!
Full recipe is below, I can’t wait for you to try these <3
For the Brownies (adapted from Ambitious Kitchen)
1 cup almond butter (sub cashew or pecan butter)
½ cup coconut sugar
¼ cup maple syrup
1 ½ teaspoons peppermint extract
2 eggs
1/3 cup unsweetened high quality cocoa powder
1 tablespoon coconut flour (or sub almond flour)
½ tsp baking soda
¼ teaspoon fine sea salt
¼ cup dark or semi-sweet chocolate chips
¼ cup white chocolate chips
Combine wet ingredients in a bowl and whisk to combine. In a separate bowl, whisk together dry ingredients. Add dry to wet ingredients and stir well until everything is mixed. Fold in chocolate chips.
Grease a 9×9 inch baking pan with coconut oil and line it with parchment paper. Add brownie batter to pan and use a greased spatula to smooth it out. Bake at 350F for 18-22 minutes or until a toothpick comes out with just a few crumbs attached. Allow to cool before removing from pan.
For the topping:
1/4-1/3 cup dark or semi-sweet chocolate chips
1/4-1/3 cup white chocolate chips
Candy canes, crushed for sprinkling on top
Melt dark chocolate and white chocolate chips in separate bowls (I microwave at 30 second intervals until smooth). If desired, add about 1/8-1/4 tsp peppermint extract to one of the chocolates for a stronger peppermint flavor.
Add white chocolate on top of the brownies and smooth it out. Add dollops of the melted dark chocolate, and use a spoon to swirl them together. Top with crushed candy cane pieces.
Set in the fridge until the chocolate hardens. Slice however you’d like (I did some squares, some triangles), and devour!
I hope you love these peppermint bark brownies! They’re truly a holiday party worthy dessert. Tag me on Instagram @abigailsapron if you make these, and stay tuned for more dessert recipes like this :)
With love,
Abigail
