Paleo, gluten-free, dairy-free, refined sugar-free, and pairs perfectly with a warm cup of tea
Happy Sunday friends!
In Charleston, it has been rainy and dreary for weeks with rare sun in between… which leads me to today, trapped inside with my kitchenaid and a craving for something with pumpkin and cinammon. I landed on cookies: the always satisfying, easy to whip up, perfect little bite sized treat.
The snickerdoodles are made with almond and coconut flour to keep them grain/gluten free + paleo, and the frosting is made with cashews + coconut yogurt to keep these completely dairy free (plus some hidden probiotics, so they’re gut healthy!) These hit the spot and will definitely be made again when it gets even colder. Find the full recipe below!
For the snickerdoodles:
1/4 cup melted and cooled coconut oil
1/3 cup pumpkin puree
1/4 cup organic coconut sugar (regular cane sugar works too)
1 tablespoon pure maple syrup
1 egg
1 teaspoon vanilla extract
1 1/2 cups packed fine almond flour
3 tablespoons coconut flour
1/4 teaspoon baking soda
1 tablespoon pumpkin pie spice
1 tsp cinammon
1/4 teaspoon salt
Optional: Roll dough in cinnamon sugar (1/4 cup coconut sugar + 2 teaspoons cinnamon)
Combine all ingredients in a mixing bowl. Roll into golf sized balls, then roll each ball in the cinammon sugar mixture. Place on a parchment lined baking sheet and bake for 8-10 minutes at 350F. Allow to cool before removing from the pan.
For the frosting:
¾ tsp cinnamon
½ tsp cardamom
½ tsp ginger
¼ tsp nutmeg
1/8 tsp cloves
1 ¾ cup raw cashews, soaked in warm water for at least 2 hours, then drained
½ cup + 2 tbsp thick plain unsweetened coconut yogurt (I used cocojune), or coconut cream
pinch salt
½ tbsp apple cider vinegar
2 tbsp coconut oil
2-3 tbsp maple syrup (adjust to taste, can also use powdered sugar)
Combine all ingredients in a blender until smooth and creamy. Place in fridge to chill for a bit to thicken it up, then frost the cookies.
Top the cookies with a sprinkle of cinnamon and an optional sprinkle of flaky sea salt, warm yourself a cup of tea, then dig in! Enjoy <3
