The creamiest ice cream with deep caramel notes, a million chocolate flecks, and a dash of flaky salt to tie it all together
You guys know how much I’ve been loving making homemade ice cream. I’ve made many flavors so far, such as:
vanilla bean
strawberry
mint chip
Rocky road
pumpkin cheesecake (top 3!!)
And many more!! This one might be my favorite. I mean.. I don’t think there’s a better flavor combo than caramel and chocolate. Full recipe is below.. take this as a sign to get an ice cream maker, this ice cream flavor alone will single-handedly make it worth the money ;)
SALTED CARAMEL STRACCIATELLA
1 1/4 cup granulated sugar
3 tbsp water
2 cups heavy cream
1 cup whole milk
1 tsp vanilla extract
1/8 tsp sea salt
6 large egg yolks
1/4 tsp flaky sea salt
5oz dark chocolate
1 tsp coconut oil
Heat water and sugar over medium high. Let it boil, then do not whisk or touch it until it is deeply brown (be careful not to burn it!)
If the caramel is crystallizing, add more water.
Reduce heat to low once it is a deep brown color, add in milk and cream. Stir, then allow mixture to come to 160F.
Add egg yolks to a bowl and whisk slightly. Once milk mixture has hit 160F, use a measuring cup to slowly pour about 1/3 of the milk mixture into the egg yolks, whisking constantly and vigorously. This will temper the egg yolks.
Once the egg yolk mixture is completely whisked and smooth, add it back to the saucepan with the rest of the milk. Whisk to combine everything, then heat again until the mixture coats the back of a spoon. Remove from heat.
Allow ice cream base to cool, then store in the fridge to chill for at least three hours, I recommend overnight.
Churn according to ice cream manufacture instructions. While churning, microwave chocolate and coconut oil until smooth. In the last couple minutes of churning, pour a slow, steady stream of chocolate into the side of the ice cream bowl. As you pour it in, it will immediately freeze giving you the most delicious chocolate flecks throughout the ice cream. Freeze for 3-4 hours before serving.
So delicious!!!! Check out my insta @abigailsapron to watch me make it <3
Have a wonderful day!
With love,
