Abundant fall produce meets a light honey lemon vinaigrette for a bright and delicious salad
She’s stunning, simple, and super yummy- perfect for any gathering. It comes together super quick and only requires a few ingredients. Perfect for a quick lunch too!! Full recipe below.
1 red pear, sliced
1 bulb fennel, thinly sliced or shredded
1 head raddiccio, thinly sliced
1 shallot, thinly sliced
honey lemon vinaigrette: 1/4 cup olive oil, 2 tbsp lemon juice, 1 tbsp ACV, 2 tbsp honey, 1 tsp Dijon, 1 tsp lemon zest, salt and black pepper
grated parmesan, manchego, or Asiago cheese (optional)
finely chopped mint, julienned
Cracked black pepper for serving
Combine ingredients for vinaigrette. Add all produce to a bowl, and toss with desired amount of the vinaigrette. Add *freshly* grated Parmesan (measure with your heart!) and cracked black pepper. Serve chilled.
Salad’s are one of my favorite things to make in the fall, just because I love the use of apples and pears in basically everything. They really elevate any salad.
