With a spicy cabbage-red onion slaw and buttermilk ranch: the most delicious, easy gameday food that you need in your life
This super easy slow cooker buffalo chicken takes 2 minutes to throw together and is always a crowd pleaser. You just throw a few simple ingredients into a slow cooker: chicken, hot sauce, butter, coconut aminos/tamari, and garlic powder. Cook it on low for 6 hours, shred it up, and DIG IN!!!
I served this on sandwiches with a spicy cabbage slaw and homemade buttermilk ranch- but it would also be delicious with some cheese sprinkled over top as a dip. Full recipe is below! Enjoy <3
For the buffalo chicken:
2.5-3lbs boneless chicken breast or thighs (recommend half of each)
1 ½ cups Frank’s red hot
½ cup ghee or salted butter, melted (one stick)
¼ cup coconut aminos or tamari
2 tsp teaspoon garlic powder
gluten free buns, for serving
Add all ingredients to a slow cooker. Cook on low for 6 hours. Remove chicken from the slow cooker and shred, then add back to slow cooker and stir.
The Slaw:
1 medium cabbage (green or red)
1 large jalapeño pepper, or 2-3 medium
½ small red onion, peeled and thinly sliced
1 cup loosely packed cilantro leaves, coarsely chopped
3 to 4 tablespoons fresh lime juice
3 to 4 teaspoons red wine vinegar
¼ cup olive oil
1½ teaspoons sea salt or more to taste
½ teaspoon freshly ground pepper or more to taste
1 tsp honey
Combine all ingredients and toss to combine.
Buttermilk Ranch (from NYT cooking):
¼ cup chilled buttermilk, more as needed
2 garlic cloves, peeled
1 teaspoon coarsely ground black pepper
3 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
1 cup store-bought mayonnaise (I used chosen foods avocado mayo)
Salt, to taste (start with ½ tsp)
Blend buttermilk, mayo, garlic, salt, and pepper. Once smooth, add your fresh herbs. Taste and add salt if needed.
For serving:
buttermilk ranch
spicy cabbage slaw
optional: cheese, sour cream, chips, etc.
Build your sandwich with all of the fixings, and serve alongside crispy potatoes or your favorite chips! Enjoy :)
