The most nourishing, comforting soup that uses up all that leftover Thanksgiving turkey. Easy to make, and easier to devour.
Happy weekend friends!!! The weather has dropped here in Charleston, and there’s only one thing to do when that happens: make a big ol’ batch of soup.
This one is a healing, comforting broth-based soup packed with all that leftover Thanksgiving turkey- skip the sandwiches and make this instead! It’s perfect to have on these chilly days. It starts with the classic base of carrots, celery, and onions- we’re layering flavors of ginger, turmeric, thyme, and adding a touch of tomato paste for a rich and flavorful broth. Simmer with a couple of bay leaves for the most delicious soup you’ll want to make over and over again! If you don’t have any leftover turkey, you can absolutely sub shredded chicken! Full recipe below. Enjoy <3
1 tbsp olive oil
1 large or 2 small yellow onions, chopped
2-3 large carrots, chopped
3 celery ribs, chopped
6 cloves garlic, minced
1/2 tsp ground turmeric
1/2 tsp ground ginger
½ tsp oregano
1 tbsp tomato paste
1 tsp fresh chopped thyme leaves
2 bay leaves
About 2 cups or more leftover shredded turkey (sub shredded chicken)
1/2 tsp salt + more to taste
Cracked black pepper, to taste
Brown rice, wild rice, or short grain pasta of choice for serving (I used brown rice cooked in broth)
Start by heating 1 tbsp olive oil in a pot over medium high heat. Once shimmering, add in onions, carrots, and celery, sauté until onions turn golden.
Add in garlic, sauté for another minute until fragrant.
Add in turmeric, ginger, oregano, tomato paste, thyme, salt, and pepper. Stir until everything is combined. Add in leftover shredded turkey, stir again. Pour in broth, add bay leaves. Bring to a boil, then reduce to a simmer and cook until carrots are tender. Add more salt and pepper to taste.
Serve over grain of choice (feel free to stir rice or pasta into the soup at the end of cooking as well), garnish with fresh parsley and Parmigiano reggiano, if desired. Enjoy!!
I hope you love this recipe!! It’s such a quick and easy soup but is so nourishing… there’s truly nothing better. The beginning of many soup recipes this season.. stay tuned for more!! Have a wonderful weekend friend <3
With love,
Abigail
