HAPPY NEW YEAR’S EVE friends!! I hope you’ve all had a wonderful holiday filled with lots of rest and happy memories. I can’t believe the year is almost over!!
Today is the first day since last Friday that I’m feeling human again after having the flu.. it is no joke!! Perfect timing to feel better, though, because I get to share with you my favorite recipes from 2025 before the year comes to an end. I spent my time while I was resting scrolling through everything I’ve made this year and have carefully selected the recipes below as my favorites!! ;)
We’ve got a little bit of everything in the mix here: sides, lunch/dinners, and desserts. There are SO many different flavors here too, definitely something for everyone!! I hope you love these recipes, and if you didn’t get a chance to try them out in 2025- here’s your sign to make them in the new year! The order is random; they are not ranked (I already had a hard enough time choosing these, I couldn’t possibly rank them… plus they’re all so different!) Enjoy <3
Ragu Bolognese, served with Homemade Gluten-Free Cavatelli Pasta: truly one of the best bolognese sauce’s I’ve ever had! I would half the amount of red pepper flakes, or even quarter them + adjust to taste. I served this at my Italian dinner party and it was a hit!
Spring Chicken Thighs with Herby Gremolata: A simple, light dish that allows the chicken to be the star, with an incredible brightness from a quick herby spring onion gremolata. YUM!!!
Spiced Salmon with Peach Salsa and Coconut Rice: I’m counting down the days until peaches are once again in season and I can make this beautiful dish. The spices of the salmon with the bright peach salsa and creamy coconut rice are just to die for!! My whole family loved this one- definitely a summertime staple.
French Onion Pot Roast: I made this recipe for my sister’s birthday dinner and everyone was obsessed!! This is delicious paired with mashed potatoes.
Honey Mustard Chicken and Sweet Potato Bowl: sweet, savory, and tangy- these bowls deliver on every front. They’re seriously good. There’s nothing like a good roasted sweet potato moment!!!
Strawberry Avocado Salsa Chicken Bowls: my mom and I’s.. dare I say… all time favorite summer meal. There’s just something about the flavor combo of fresh strawberries and creamy avocado that is just so right.
Greek Meatballs in Tomato Eggplant Sauce with Feta: think classic Italian meatballs get a Greek makeover. I served these over orzo and it was an absolutely fabulous weeknight dinner!!
Pumpkin Pie Pop Tarts: These had to get a spot, #1 because they’re delicious but #2 they’re SO CUTE and fun to make!!! Topped with maple glaze AND gluten, dairy, + refined-sugar free.
Stone Fruit Crisp (Peach and Cherry Crisp): I think this was my favorite summer dessert… nothing screams summer like stone fruits and crisps/crumbles. Top with vanilla ice cream.. chef’s kiss
Za’atar Mediterranean Bowls and Red Pepper Hummus Chicken Shawarma Bowls: Literally every single Greek bowl variation I’ve posted is KILLER and they always end up being my favorite meals of the week. But these two I think about often. They’re perfect!!!
Chocolate Cherry Bombs: energy balls that taste like fudgy, tart-cherry filled brownies. Skip the protein bars and make these guys… thank me later!
Fig and Goat Cheese Galette with Caramelized Onions: the most delicious appetizer that is also so beautiful. There’s something so wonderful about a fig to me I just love them so much- they had to go on this list!
Dutch Apple Pie with Homemade Vanilla Ice Cream: Now I’m a chocolate dessert lover through and through, but this. THIS dessert changed my life. I can’t eat any other pie in my life- nothing will come close.
Autumn Harvest Bowls: these are near and dear to my heart, full of all of my favorite produce, including roasted squash and apples. YUM!!! I could also drink that dressing.
Miso-Honey Glazed Carrots over Black Sesame Hummus: I’ll be honest, anytime I make any carrot dish I think about these carrots and how they are just elite. I truly think these are the best carrots I’ve ever had + will ever have. The hummus is also the best hummus I’ve ever had. 10’s all around.
Homemade Chipotle Bowls with Carne Asada Steak: these chipotle bowls are truly at another level. Everything you could get on your bowl is here, except made from scratch, and 20x better. Take my word for it: insane.
Salted Caramel Stracciatella Ice Cream: if you know me at all, you knew there was going to be an ice cream recipe thrown in here somewhere. This one takes the cake (or ice cream, ha-ha).. the flavor is DREAMYYYY!!!
Miso Salmon and Soba Noodle Bowls: this one is from very recently, and will soon be made again- if you’ve ever had miso, you know what’s up, and if you haven’t: make it your New Year’s resolution to try it. Nothing can compare to miso!!!
Lemon White Bean Soup with Herbs and Greens: this NYT Cooking recipe had to make it onto this list, because I dream of this soup. Fresh lemon juice, tender herbs, and white beans that get simmered until the soup is almost stew-like… absolutely divine.
Peanut Butter Cup S'mores Cookies: if you saw my Christmas cookie boxes, you know I made 10 (!!!) different types. These PB Cup S’mores cookies were the most fabulous and delicious cookie I’ve possibly ever had- giving them the final spot on this list!!!
*Disclaimer: Beef Bourguignon also absolutely gets a spot here, it’s one of my favorite meals EVER.. that being said, I’ve revamped the recipe I posted earlier this year and will be posting the new and improved version within the next few days!!
I hope you get a chance to try these recipes and love them! Once again, Happy New Year’s Eve friends, it’s been such a wonderful year <3
