A crowd-pleasing side salad with an explosion of flavor and an addictive white balsamic vinaigrette
Happy Sunday friends!! A new week calls for new and exciting and delicious recipes. You know it’s a good salad when it gets requested for Thanksgiving dinner; this one is perfect for any crowd!
We’re starting with a bed of romaine lettuce, then piling on sliced tomatoes, candied walnuts, thinly sliced shallots, shaved Parmesan, and crispy prosciutto. All of the best things in one bowl!
Top it off with an addictive white balsamic vinaigrette, and enjoy what’s sure to be one of your new favorite side salads! Full recipe is below, I hope you love it <3
For the white balsamic vinaigrette:
1/3 cup olive oil
¼ cup white balsamic vinegar
1 teaspoon honey
1 teaspoon dijon mustard
1 tbsp grated Parmesan
1 garlic clove, finely minced or grated
¼ teaspoon kosher salt, or to taste
Freshly ground black pepper, to taste
For salad assembly:
1 head romaine lettuce, roughly chopped
3oz prosciutto, roasted at 425F until crispy (check after 10-15 mins)
1 shallot, thinly sliced
1/3 cup halved cherry or grape tomatoes
1/3 cup shaved parmigiano reggiano
1 batch white balsamic vinaigrette
3 oz candied walnuts, chopped
Start by making your vinaigrette, then set aside while you assemble the salad.
An optional but recommended step: add the romaine, shallot, and tomatoes to the bowl and place in fridge to chill for a few minutes.
After chilling, add Proscuitto, Parmigiano, walnuts, and ½ of the vinaigrette. Toss to combine, then top with more vinaigrette to taste! Serve alongside steak or your favorite protein and a potato or pasta for a full meal. Enjoy!!
I hope you love this recipe! It’s such an easy and delicious one to whip up.
